For a simple, wholesome start to the day handmade granola is an easy fix. Each batch is different, and all recipes can be changed and tweaked to whatever variation makes you happy.
I make mine like this:
In a large bowl mix 3 cups of rolled oats, about 250g of mixed seeds (pumpkin, sunflower, golden linseed) & 150g broken nuts. I like hazelnuts, but almonds and walnuts also work well. Most health shops sell bags of mixed seeds, and mixed broken nuts, which keeps the costs down and makes this a minimal effort process.
In a pot, melt 3 tablespoons of coconut oil with 3 tablespoons of honey and 3 teaspoons of ground cinnamon. If you like sweeter cereals, add a bit more honey. The coconut oil produces a lovely rounded flavour.
Mix the liquid into the dry ingredients until all of the dry areas are nice and moist. Place the mixture on a baking sheet and bake at 180 deg (C) for 30-40 minutes, stirring every so often whilst you keep a careful eye on it so as not to burn the top.
Once it’s turned a delicious golden brown remove from the oven and allow to cool.
Stir in around 400g of mixed dried cranberries, blueberries, goji berries and raisins in whatever ratio you like.
Store in an air tight container and enjoy!
