Prawn Linguini with Sun-dried Tomato and Goats Cheese

Great for after work convenience this mostly healthy, punchy dish is easy to make with very little effort and even less mess. Best served with good company and a glass of wine!

Recipe

Boil your linguini with a teaspoon of olive oil and a little salt.

In a large frying pan fry a clove of garlic (chopped), one red onion (chopped), chilli to taste and 6 sun-dried tomatoes until nicely browned. Add a tin of chopped tomatoes, salt and pepper, and a little paprika.

Boil the sauce on good heat until it becomes thick.

Once the sauce is rich add 6 to 8 prawns per person. These can be cooked or uncooked, and should be fried in the sauce for a few minutes until pink right through.

Place the linguini in the bottom of your serving bowls. Deep bowls work best. Spoon the sauce of your prawn mix over the pasta (excluding the prawns). Add crumbled goats cheese and a good amount of chopped, fresh basil. Mix together so that the linguini is well integrated with the sauce.

Add the prawns to the top of the dish and sprinkle with cracked black pepper.

Cooking Time: 10 minutes, serves 2.
