Add sliced black mushrooms and cover until the mushrooms start to make juice. The heat needs to be high for this to happen.
Add a sliced red bell pepper and slices of beef. I use rump steak cut into chunks, but any kind of beef works. Generally, you want something thats already quite tender and of the best quality you can afford. When the beef is brown on the outside and springy to touch it is medium rare. This takes about 3 minutes.
Once the beef is cooked to your liking, add a tub of sour cream and stir well. Heat gently until warmed through and serve soon. Plain yoghurt works well as a low-fat version.
I like it with rice. It can be doubled up as a pasta sauce or enjoyed with crusty bread as an alternative.
